2:26 am--let the night owling commence

I am so probably pulling an all-nighter tonight! Not just on the computer but I have some housecleaning (minor) to do and a little scrappin'.
This was in my Motherclick Newsletter so I have to share! Harrison pretty much loves his fruits and veggies. He eats those before the main dish! But I like having newer, creative ideas for serving him lunch.
Getting Creative for the Lunch Box
Make your child's lunch as entertaining as it is healthy. Pack food, dipping sauces and homemade snacks in small, colorful containers. Kids love to play, so food should appeal to their sense of fun. Include surprises, like notes or an unexpected favorite food so they look forward to their midday meal. Also buy some small ice packs to tuck in the lunchbox; the ability to chill food will increase your menu options.Here are some more ideas for packing fun into their lunchboxes and putting good food in their bellies:
1. Dip it.
Kids love to dip things, so pack little containers of hummus or bean dip and pita bread. The Mediterranean-inspired dips are packed with protein and a good source of fiber.
Celery sticks with a cottage-cheese salsa dip, baby carrots and yummy salad dressing dip, or apple slices and peanut butter can contribute to the fruits-and-veggies quota.

2. Skewer it.
Eating the same old sandwich over and over again is boring. So reinvent it. You can put all the essentials of a sandwich on wood skewers. Thread alternating small chunks of turkey, ham, cheese and bread (add cherry tomatoes for fun) on skewers for a new dimension. This trick also works well with fruit.

3. Toss it.
Most kids go nuts for noodles, so pack pasta salads. It's a good way to sneak in vegetables and introduce new flavors.

4. Wrap it.
Add zip with colored tortillas. Smear red and green ones with a ranch dip or cream cheese and layer in cold cuts. They're tasty, colorful and easy.

5. Bake it.
If all else fails, you know kids will eat dessert. Make healthy dessert bars that give them a treat packed with good nutrition.

Today was perfect Fall weather. I tried to get H to go somewhere but he refused--even Chuck E. Cheese! (Remember yesterday?) I did get him out to go feed the ducks at the library's pond. We came home, did some painting...orange was his favorite color choice today. I loved that he made an "orange oval!" and it did look like an oval. Then he started slamming his hand on the paper and I asked what he was making--"High fives for daddy!" So funny. We watched a little Shrek. We ate some macaroni and cheese. Ben came home and told me he is already counting down for summer vacation! We made some sugar cookies together as a family (in our hillbilly still under construction kitchen). We drank some chocolate milk with our cookies. We talked about our weekend plans and planned yet another trip to Lowe's Home Improvement store. I like days like this where not major happens!
